Processing:
This coffee process involves fermenting the cherries inside grain pro bags for 48 hours. As temperatures in Armenia are quite high, grain pro bags are placed in water tanks to reduce the temperature, allowing for a more controlled fermentation. Coffee then is pulped and placed in raised beds for 18 days until it reaches it's ideal moisture content of 11%.
Flavour Notes:
Dried fruit, Raisin, Red berries, Citrus fruit. Syrupy mouthfeel, juicy, combined with a medium-high citric acidity, quite supportive. Has citrus notes present in the whole cup together with dried figs and raisin, and red berries.
